Posau les escopinyes en aigua amb sal durant almenys 30 minuts per eliminar la sorra.<\/p>\n<p>En una paella gran, escalfau un raig d&#8217;oli d&#8217;oliva a foc mitj\u00e0. Afegiu-hi la ceba picada i sofregiu-la fins que sigui transparent. Afegiu els alls picats i sofregiu-ho tot durant un minut m\u00e9s, fins que desprenguin la seva aroma.<\/p>\n<p>Posau-hi una cullerada de farina a la paella i remenau b\u00e9 perqu\u00e8 es barregi amb la ceba i els alls. Cuinau-la durant un minut per eliminar el gust de farina crua.<\/p>\n<p>Incorporau\u00a0el vi blanc a la paella i remenau-ho constantment fins que la farina es dissolgui completament i la salsa comenci a espessir-se.<\/p>\n<p>Afegiu el fumet de peix a la paella i remenau b\u00e9 fins que bulli. Despr\u00e9s, reduiu el foc per deixar que la salsa es cuini a foc lent durant uns 5 minuts, fins que espesseixi lleugerament.<\/p>\n<p>Salpebrau els lloms de llu\u00e7 i posau-los a la paella amb la pell cap amunt. Cuinau el peix durant uns 5-7 minuts, depenent del gruix dels lloms, fins que siguin cuits, per\u00f2 no secs.<\/p>\n<p>Ara \u00e9s el moment d&#8217;afegir-hi les copinyes i els p\u00e8sols i, a continuaci\u00f3, tapau la paella. Cuinau-ho tot fins que les escopinyes s&#8217;obrin, devers 3-5 minuts.<\/p>\n<p>Afegiu el julivert tallat a la paella i barrejau-lo suaument per distribuir-lo per tota la salsa.
