Un plat d\u2019aprofitament que s\u2019acompanya amb grells, patates i altres verdures segons la temporada i que s\u2019aromatitza amb fonoll fresc i pebre coent. Tradicionalment els diumenges de Pasqua a Llub\u00ed i crec que a molts pobles de l\u2019illa, les fam\u00edlies van a la process\u00f3 de l\u2019Encontre, a l\u2019Ofici i despr\u00e9s es reuneixen al voltant de la taula per menjar freixura tots plegats.<\/p>\n<p>Podria haver publicat una recepta de frit de me, ara que falten dues setmanes per a les festes de Pasqua per\u00f2 per fer un poc el contrari he cregut oport\u00fa publicar aquest de menuts de gallina que em va fer arribar el nostre amic Xavier. Un frit pr\u00e0cticament igual en l\u2019elaboraci\u00f3 nom\u00e9s que en aquest cas s\u2019aprofiten els menuts de gallina o de pollastre, m\u00e9s suau en sabor i que pot ser una bona alternativa per a qui no li agradi el me.<\/p>\n<p>N\u2019Ant\u00f2nia Mascar\u00f3, padrina de la dona d\u2019en Xavier, que va n\u00e9ixer i viure a Cas Bernat, en plena Serra de Tramuntana, \u00e9s qui cuinava aquesta recepta, donant plena mostra del que es podia fer amb mat\u00e8ries senzilles i d\u2019aprofitament i que solia cuinar per les festes de Nadal. A l\u2019original hi havia cors de pollastre, si vos agraden n\u2019hi podeu posar.<\/p>\n<p>Amb aquestes quantitats en poden menjar entre 6-8 persones si els feis com un entrant.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>750 g de ventrell de gallina o pollastre<\/li>\n<li>250 g fetgets fetgets<\/li>\n<li>250 g vermells d\u2019ou no nats<\/li>\n<li>100 g p\u00e8sols<\/li>\n<li>100 g favetes tendres<\/li>\n<li>6 patates petites<\/li>\n<li>5 carxofes<\/li>\n<li>2 manats de grells<\/li>\n<li>1 porro (la part blanca)<\/li>\n<li>1\/2 pebre vermell<\/li>\n<li>fonoll fresc<\/li>\n<li>2-3 pebres coents<\/li>\n<li>2-3 fulles de llorer<\/li>\n<li>alls<\/li>\n<\/ul>\n<p>Per comen\u00e7a la recepta frit de menuts de gallina i pollastre, bullirem els ventrells una hora aproximadament. Colarem \u00a0i deixarem refredar. Els tallarem a daus.<\/p>\n<p>Bullirem els vermells d\u2019ou uns 3-4 minuts. Deixarem que refredin.<\/p>\n<p>Tallarem tota la verdura a daus petits. Pelarem les carxofes fins que tenguem els cors i els tallarem en 8 parts. Reservarem.<\/p>\n<p>Posarem oli suficient\u00a0per fregir en una paella. Fregirem primer les patates amb alguns alls, aprofitant que l\u2019oli \u00e9s net. Les anirem colant d\u2019oli i les posarem en una greixonera. Seguidament fregirem els pebres coents tallats per la meitat, les fulles de llorer i els alls partits per la meitat i hi posarem el ventrell fins que vegem que s\u2019ha daurat. El colarem d\u2019oli i el posarem a la greixonera. Farem el mateix amb el fetge de pollastre, el pebre, els vermells d\u2019ou i les carxofes. Anirem salant cada capa.<\/p>\n<p>Posarem aigua en una pella a part, m\u00e9s petita, i hi courem els p\u00e8sols \u00a0i despr\u00e9s les favetes. Reservarem.<\/p>\n<p>Fregirem el grell i el porro i quan vegem que quasi est\u00e0 a punt hi afegirem els p\u00e8sols i les favetes, deixarem que es faci un moment i ho posarem a la greixonera procurant treure tot l\u2019oli que puguem.<\/p>\n<p>Picarem el fonoll i l\u2019escamparem sobre la verdura.<\/p>\n<p>Abans de treure el frit a la taula el tornarem a encalentir i remenarem b\u00e9 per a qu\u00e8 es mesclin i confitin totes les capes. Aprofitarem per rectificar de sal i de coent. Si trobam que ha quedat pobre de coent, fregirem un o dos pebres a part i abocarem aquest oli al frit.<\/p>\n<p>Servirem ben calent acompanyat d\u2019unes bones olives i pa.<\/p>\n<p>Vull agrair a en Xavier Segu\u00ed que em deix\u00e0s la recepta. Poder accedir a aquests plats tan significatius per a una fam\u00edlia \u00e9s per a mi un privilegi i poder-los compartir despr\u00e9s em fa molt feli\u00e7.<\/p>\n<p><strong>Consells pr\u00e0ctics<\/strong><\/p>\n<p>&#8211; Un dels punts m\u00e9s importants del frit \u00e9s que no sigui oli\u00f3s. Per aix\u00f2 insistesc en qu\u00e8 aneu colant l\u2019oli tant com pugueu. Ja de per si \u00e9s un plat contundent i val m\u00e9s alleugerir-lo en la mesura possible.<\/p>\n<p>&#8211; Millor si tallau les verdures i la carn a bocins petits, aix\u00ed \u00a0a cada cullerada hi tendreu m\u00e9s varietat i podreu degustar millor el conjunt del plat.<\/p>\n<p>&#8211; El frit, en general, \u00e9s un plat econ\u00f2mic i senzill per\u00f2 que du feina de tallar i fregir. \u00c9s preferible que renteu la verdura primer i talleu tota la mat\u00e8ria prima abans de posar-vos als fogons. Si no estau pendents del foc i es cou massa us quedar\u00e0 amb una textura recuita i gomosa gens recomanable.<\/p>\n<p>&#8211; Aquest \u00e9s un plat que es pot fer perfectament el dia abans. Si ho feis aix\u00ed teniu en compte que les patates s\u2019han de fer el mateix dia. A casa meva no ens agrada que hi hagi molta patata, com podeu veure a les imatges.
