Fins i tot hi ha unes jornades gastron\u00f2miques dedicades a aquest plat. Ara b\u00e9, cal comentar que aquests suquets es fan per tota la geografia costera i arreu del nostre pa\u00eds.<\/p>\n<p>Avui us la presentam sense p\u00e8sols, ja l\u2019hem fet altres vegades amb aquestes perles o caviar del Maresme, com la s\u00edpia amb p\u00e8sols.<\/p>\n<p>La<b>\u00a0recepta de l&#8217;estofat de s\u00edpia amb patates<\/b>\u00a0ens ha sortit un rodona, per sucar-hi pa i llepar-se\u2019n els dits!<\/p>\n<h4><b>Ingredients:<\/b><\/h4>\n<ul>\n<li>1 kg i\u00a01\/4 de s\u00edpia bruta<\/li>\n<li>4 patates<\/li>\n<li>La salsa o melsa de la s\u00edpia (La bosseta marr\u00f3 de l&#8217;interior)<\/li>\n<li>6 escalunyes<\/li>\n<li>3 grans d\u2019all<\/li>\n<li>2 o 3 tom\u00e0quets madurs<\/li>\n<li>1 copeta de vi blanc sec<\/li>\n<li>Oli d\u2019oliva verge extra<\/li>\n<li>Sal<\/li>\n<li>Julivert<\/li>\n<li>1 fulla de llorer<\/li>\n<li>Una mica de xocolata negra<\/li>\n<\/ul>\n<p>(\u00c9s molt important que la s\u00edpia sigui de costa de l\u2019anomenada bruta. Neta o congelada, no val res).<\/p>\n<h4><b>Elaboraci\u00f3:<\/b><\/h4>\n<p>En una cassola, preferiblement de fang o de ferro, sofregim una mica les escalunyes amb un raig d\u2019oli d\u2019oliva verge extra. Quan siguin una miqueta fetes hi afegim la s\u00edpia un cop rentada i tallada a daus (en reservau la melsa) i una fulleta de llorer. Tapam la cassola i ho deixam coure una estona a foc lent fins que la s\u00edpia deixi anar tot el seu suquet.<\/p>\n<p>A continuaci\u00f3, hi tiram els alls picadets, li donam uns tombs a tot plegat, perqu\u00e8 els alls es daurin una mica i seguidament hi afegim el tom\u00e0quet pelat, sense llavors i ratllat o esmicolat petit. Seguim la cocci\u00f3 amb la cassola tapada, a poc a poc fins que ens quedi ben confitat tot plegat. Despr\u00e9s, hi posam la copeta de vi i ho deixam reduir. Podem afegir-hi una culleradeta de farina, coent-la una miqueta perqu\u00e8 el suc ens quedi al final una mica m\u00e9s esp\u00e8s.<\/p>\n<p>En aquest moment, hi tirem una mica d\u2019aigua o fumet i quan arrenqui el bull, hi posem les patates tallades esqueixades. Ho deixam coure tot uns minuts, i hi afegirem la salsa o melsa de la s\u00edpia, una mica de xocolata negra, rectificarem de sal i acabarem la cocci\u00f3 fins que les patates siguin cuites.<\/p>\n<p>Deixam reposar el guisat i ja el tindrem a punt per gaudir-lo.<\/p>\n<p>Tamb\u00e9 podem acabar l\u2019estofat afegint-li una picada catalana (ametlles, all, pa i julivert) amb el
