D&#8217;una banda, ha dissenyat una nova carta per dinar i per sopar per al&nbsp;<strong>restaurant Sa Terrassa i, de l&#8217;altra, presenten nou restaurant: Sa Tafona<\/strong>. Tots dos es troben dins l&#8217;hotel&nbsp;<strong>Son Bunyola<\/strong>, situat&nbsp;<strong>als afores de Banyalbufar<\/strong>.<\/p>\n\n\n\n<p><strong>Sa Terrassa: cuina internacional i producte local&nbsp;<\/strong><\/p>\n\n\n\n<p>El restaurant Sa Terrassa mant\u00e9 la passi\u00f3 pel producte de proximitat com les verdures i hortalisses de Mallorca i de l&#8217;hort de l&#8217;hotel, el xot mallorqu\u00ed, la porcella o la gamba vermella; i pels ingredients de la millor qualitat, com ara el pernil d&#8217;agl\u00e0 100%, les ostres, la tonyina Balfeg\u00f3, la presa ib\u00e8rica d&#8217;agl\u00e0 o el bou de la vall de l&#8217;Esla.<\/p>\n\n\n\n<p>Aix\u00ed, a la seva proposta culin\u00e0ria, hi ha arrossos, croquetes i&nbsp;<em>salmorejo<\/em>, que s&#8217;intercalen amb especialitats gastron\u00f2miques d&#8217;altres cultures, com ara tatakis, cevitxes, t\u00e0rtars, tagins o woks, entre moltes altres propostes. Pel que fa a la carta de postres, gaireb\u00e9 tots comparteixen frescor i cremositat, com el brioix banyat en infusi\u00f3 de crispetes i taronja amb gelat de caramel salat, la crema de mascarpone amb bescuit banyat amb caf\u00e8 i crem\u00f3s de xocolata negra o el pastisset amb crema de llima, gel d&#8217;alfabeguera i gelat.<\/p>\n\n\n\n<p>Quant als vins, el celler del restaurant Sa Terrassa \u00e9s excepcional, amb m\u00e9s de 120 refer\u00e8ncies de vins, majorit\u00e0riament de Mallorca, per\u00f2 tamb\u00e9 amb refer\u00e8ncies estatals i internacionals.<\/p>\n\n\n\n<p><strong>El nou restaurant: Sa Tafona<\/strong><\/p>\n\n\n\n<p>A la xef&nbsp;<strong>Brenda Lisiotti<\/strong>&nbsp;i a la directora dels restaurants&nbsp;<strong>Marta Pellicer<\/strong>&nbsp;els motiven els reptes.&nbsp; Per aix\u00f2, enguany&nbsp;n&#8217;enceten&nbsp;un: la obertura del restaurant Sa Tafona.<\/p>\n\n\n\n<p>Totes dues s&#8217;han proposat aprofundir en els or\u00edgens de la cuina mediterr\u00e0nia. Per aix\u00f2, han cercat els punts d&#8217;uni\u00f3 entre els m\u00e9s de 20 estats que convergeixen a la conca mediterr\u00e0nia: Espanya, Fran\u00e7a, M\u00f2naco, It\u00e0lia, Eslov\u00e8nia, Cro\u00e0cia, B\u00f2snia i Herzegovina, Montenegro, Alb\u00e0nia, Gr\u00e8cia, Israel, Egipte, Turquia, Palestina, L\u00edban, Tun\u00edsia, Arg\u00e8lia i el Marroc, com tamb\u00e9 amb les cultures que hi conviuen (occitana, catalana, amaziga, etc.). A m\u00e9s, per a la seva proposta tamb\u00e9 hi han combinat receptes d&#8217;imperis antics, com ara el rom\u00e0, el grec, el fenici, el musulm\u00e0, i de l&#8217;antiga Mesopot\u00e0mia.<\/p>\n\n\n\n<p>Moltes de les similituds que existeixen avui dia, s\u00f3n posteriors al descobriment d&#8217;Am\u00e8rica, quan els navegants en dugueren productes com la tom\u00e0tiga, la patata i el pebre, i els inclogueren&nbsp;a les seves receptes.<\/p>\n\n\n\n<p>Per mostrar aquesta evoluci\u00f3,&nbsp;<strong>el restaurant Sa Tafona ofereix 2 men\u00fas de degustaci\u00f3<\/strong>: un de breu de 5 passos i un de llarg de 7, el servei del qual dura aproximadament 3 hores. Els plats que els integren s\u00f3n tots receptes tradicionals dels respectius pa\u00efsos d&#8217;origen. El motiu d&#8217;aquesta tria, afirma Brenda Lisiotti, \u00e9s que \u201cquan alguna cosa roman tant de temps en la tradici\u00f3 gastron\u00f2mica d&#8217;un pa\u00eds, \u00e9s que ha de ser bo per for\u00e7a\u201d.<\/p>\n\n\n\n<p>Aix\u00ed, els plats que hi ha a la carta de Sa Tafona s\u00f3n: la&nbsp;<strong>caldereta de llagosta i torrada de tremp\u00f3<\/strong>; el&nbsp;<strong>burek de porro rostit amb pinyons<\/strong>, que prov\u00e9 de la cultura dels pa\u00efsos que van formar part de l&#8217;imperi otom\u00e0 (els acuals Turquia, S\u00e8rbia i Alb\u00e0nia); la&nbsp;<strong>guatlera cuita dins argila i pastilla del seu guisat<\/strong>,&nbsp;origin\u00e0ria del Marroc; o l&#8217;<strong>ast de verat, chermoulah i tom\u00e0tiga verda adobada<\/strong>, d&#8217;inspiraci\u00f3 andalusina, entre molts altres.<\/p>\n\n\n\n<p>Per acompanyar els plats, han triat aperitius i vins amb molta personalitat. &#8220;Cercam&nbsp;<strong>propostes molt genu\u00efnes, tant en \u00e0mbit de vermuts com de cerveses<\/strong>. Per exemple, hem incl\u00f2s a la carta una cervesa artesanal elaborada amb olives, que \u00e9s catalana i es diu Oliba Green. Pel que fa als vins, estam configurant una proposta molt selecta, que n&#8217;inclou d&#8217;exquisits, desconeguts i d&#8217;anyades excepcionals, explica la directora del
