L&#8217;acte, presentat per Cristina Bugallo, periodista i gestora cultural, Cris s\u2019ha celebrat a Can March \u2013 Museu Enol\u00f2gic, un espai cedit per l\u2019Ajuntament de Binissalem.<\/p>\n<p>Com ha explicat\u00a0<strong>Josep Llu\u00eds Roses<\/strong>, president de la DO Binissalem-Mallorca, L\u2019objectiu d\u2019aquest reconeixement \u00e9s\u00a0<strong>honorar persones\u00a0<\/strong>i\u00a0<strong>entitats\u00a0<\/strong>que\u00a0<strong>han contribu\u00eft\u00a0<\/strong>de manera destacad<strong>a al m\u00f3n de la vitivinicultura, el vi, la cultura gastron\u00f2mica i altres \u00e0mbits rellevants de la societat<\/strong>.<\/p>\n<p>Durant les onze edicions, el guard\u00f3 Mantonegro d\u2019Argent ha recorregut espais simb\u00f2lics de Palma com Casal Balaguer, Fundaci\u00f3 la Caixa i Fundaci\u00f3 Sa Nostra, i des de 2019 ha visitat cellers i municipis de la DO Binissalem: Santa Maria del Cam\u00ed, Binissalem, Consell, Santa Eug\u00e8nia i Sencelles.<\/p>\n<p>Per a aquesta edici\u00f3, s&#8217;ha guardonat el\u00a0<strong>restaurant Can March de Manacor<\/strong>\u00a0i\u00a0<strong>Julio Mart\u00ednez-Almoyna Rullan<\/strong>,\u00a0professional de prestigi en l\u2019\u00e0mbit m\u00e8dic i figura rellevant en la divulgaci\u00f3 del vi, la cuina i la cultura gastron\u00f2mica de Mallorca.<\/p>\n<p>El primer guard\u00f3, d\u2019aquesta nova edici\u00f3, s\u2019ha atorgat al\u00a0<strong>Restaurant Can March de Manacor<\/strong>, establiment<strong>\u00a0fundat el 1925 i referent gastron\u00f2mic de Mallorca<\/strong>. Tres generacions han mantingut viva una cuina mallorquina arrelada, evolutiva i basada en el producte local i de temporada, amb una proposta creativa que combina tradici\u00f3 i innovaci\u00f3. L\u2019equip encap\u00e7alat pels germans Miquel Gelabert (xef) i Tolo Gelabert (cap de sala) ha destacat per:<\/p>\n<ul>\n<li>Una cuina que homenatja el llegat familiar i la mem\u00f2ria gustativa de la seva mare, Catalina.<\/li>\n<li>L\u2019\u00fas de productes de temporada i proximitat com a base d\u2019una cuina sincera.<\/li>\n<li>La programaci\u00f3 de tastos i maridatges amb cellers i en\u00f2legs\/es, actuant com a plataforma de divulgaci\u00f3 del vi i de les varietats locals.<\/li>\n<li>La promoci\u00f3 del producte mallorqu\u00ed a trav\u00e9s d\u2019un espai de venda de productes locals amb marca de qualitat.<\/li>\n<li>La celebraci\u00f3 del seu centenari, amb un receptari commemoratiu:\u00a0<em>De pinyol Vermell \u2013 Cent anys de cuina a Can March 1925\u20132025<\/em>. El guard\u00f3 ha estat lliurat pel Batle de Binissalem, V\u00edctor Mart\u00ed.<\/li>\n<\/ul>\n<p>Julio Mart\u00ednez-Almoyna Rull\u00e1n \u00e9s professional de prestigi en l\u2019\u00e0mbit m\u00e8dic i figura rellevant en la divulgaci\u00f3 del vi, la cuina i la cultura gastron\u00f2mica de Mallorca. Entre les seves aportacions destaquen:<\/p>\n<ul>\n<li>Una carrera m\u00e8dica brillant en cirurgia general i especialitzaci\u00f3 en patologia mam\u00e0ria.<\/li>\n<li>La participaci\u00f3 activa en programes de prevenci\u00f3 i divulgaci\u00f3 sanit\u00e0ria a Mallorca.<\/li>\n<li>Una traject\u00f2ria enol\u00f2gica marcada per la formaci\u00f3 i el rigor: campi\u00f3 nacional de tast (revista\u00a0<em>Sobremesa\u00a0<\/em>i\u00a0<em>Vinoselecci\u00f3n<\/em>), acad\u00e8mic de m\u00e8rit i cofundador de l\u2019Acad\u00e8mia de la Cuina i del Vi de Mallorca.<\/li>\n<li>Membre del panell de tast de la DO Binissalem des de 1990, on ha aportat coneixement, sensibilitat i comprom\u00eds amb les varietats aut\u00f2ctones.<\/li>\n<li>Formaci\u00f3 continuada: WineSet London (2023) i titulaci\u00f3 de sumiller per l\u2019EHIB (2025).<\/li>\n<\/ul>\n<p>Ha rebut el guard\u00f3 de mans de Joan Simonet, Conseller d\u2019Agricultura, Pesca i Medi Natural.<\/p>\n<p>L&#8217;acte ha estat amenitzat per\u00a0<strong>Clara Fiol<\/strong>, poeta i cantant, i\u00a0<strong>Miquel Alc\u00e0rria<\/strong>, m\u00fasic i coordinador del taller de guitarra de l\u2019Espai Mallorca de Barcelona. Durant l\u2019acte han interpretat diverses peces, incloent-hi Can\u00e7\u00f3 de suburbi de Toti Soler i Josep M.
