El veredicte s&#8217;ha fet p\u00fablic el 15 de juny.<\/p>\n\n\n\n<p>Es tracta d&#8217;uns premis que atorga l&#8217;Institut Internacional de Tast de Brussel\u00b7les, una entitat formada per cuiners i experts en gastronomia de renom, els quals avaluen i premien la qualitat sensorial d&#8217;aliments i begudes.<\/p>\n\n\n\n<p>El seu&nbsp;<strong>rigor\u00f3s proc\u00e9s de tast, que es basa en criteris de gust, textura i aroma<\/strong>, garanteix que nom\u00e9s els productes que realment destaquen en aquests aspectes siguin reconeguts.<\/p>\n\n\n\n<p>Aquest guard\u00f3 reafirma la qualitat excepcional d&#8217;un producte que no nom\u00e9s \u00e9s unes postres, sin\u00f3 un s\u00edmbol de la rica her\u00e8ncia gastron\u00f2mica de Mallorca.<\/p>\n\n\n\n<p>El&nbsp;<strong>gat\u00f3 d&#8217;ametla de Mallorca&nbsp;<\/strong>\u00e9s un pa de pessic elaborat exclusivament amb&nbsp;<strong>ingredients de primera qualitat, com ara l&#8217;ametlla IGP de Mallorca, sucre, ous, canyella i llimona,<\/strong>&nbsp;<strong>sense farina de blat<\/strong>, per la qual cosa \u00e9s apte per a un p\u00fablic m\u00e9s extens.<\/p>\n\n\n\n<p>El Gat\u00f3 d&#8217;Ametlla de Mallorca est\u00e0 catalogat com a&nbsp;<strong>aliment tradicional de Mallorca<\/strong>&nbsp;per la Conselleria de Medi Ambient, Agricultura i Pesca des del 2018 i est\u00e0 protegit amb aquesta recepta que \u00e9s l&#8217;original i que li atorga el nom de gat\u00f3. Tot i aix\u00f2, en un mercat on proliferen versions que no respecten la recepta tradicional,&nbsp;<strong>\u00e9s imperatiu defensar-ne la singularitat i qualitat<\/strong>&nbsp;i lluitar perqu\u00e8 no se&#8217;ls identifiqui com a gat\u00f3.<\/p>\n\n\n\n<p>L&#8216;<strong>elaboraci\u00f3 del gat\u00f3 de Trias segueix aquest m\u00e8tode artesanal<\/strong>, transm\u00e8s de generaci\u00f3 en generaci\u00f3, aix\u00ed s&#8217;assegura que cada mossegada sigui una celebraci\u00f3 de la tradici\u00f3 i un viatge a la infantesa, que evoca els records del gat\u00f3 de les nostres padrines.<\/p>\n\n\n\n<p>Pep Trias, despr\u00e9s de con\u00e8ixer que s&#8217;atorgava aquest reconeixement, ha manifestat estar molt satisfet per la&nbsp;<strong>difusi\u00f3 d&#8217;un producte com el gat\u00f3 d&#8217;ametlla de Mallorca m\u00e9s enll\u00e0 de les nostres fronteres<\/strong>, &#8222;perqu\u00e8 xefs reconeguts han degustat aquestes postres per primera vegada, i els ha sorpr\u00e8s enormement&#8220;.<\/p>\n\n\n\n<p>Forn i Pastisseria Trias \u00e9s una&nbsp;<strong>empresa familiar amb quasi 20 anys d&#8217;hist\u00f2ria a Mallorca<\/strong>. Estan especialitzats en productes de forn i pastisseria tradicionals com ara panades, cocarrois i ensa\u00efmades, entre d&#8217;altres, utilitzen ingredients locals, que fan que aquests productes siguin ideals per emportar o degustar al seu espai de cafeteria.<\/p>\n\n\n\n<p><strong>Pep Trias<\/strong>, nascut a Sant Jordi (Mallorca) l&#8217;any 1982,&nbsp;&nbsp;<strong>d&#8217;en\u00e7a dels 16 anys fa feina al m\u00f3n de la pastisseria<\/strong>. Va comen\u00e7ar la seva formaci\u00f3 a la Pastisseria Coll de Sant Jordi. Avui dia regenta la pastisseria Forn i Pastisseria Trias, situada al Secar de la Real (Palma) al costat de la seva esposa&nbsp;<strong>Maria del Mar Vich<\/strong>, on&nbsp;<strong>elaboren m\u00e9s de 500 refer\u00e8ncies<\/strong>&nbsp;repartides en diferents \u00e8poques de l&#8217;any. Cal destacar a m\u00e9s que Pep Tr\u00edas va rebre, el passat 11 de mar\u00e7, el&nbsp;<strong>premi Flor d&#8217;Ametler 2025<\/strong>&nbsp;per la seva difusi\u00f3 i comprom\u00eds amb
