{"id":6813,"date":"2013-03-21T00:16:25","date_gmt":"2013-03-21T00:16:25","guid":{"rendered":"http:\/\/anardetapes.cat\/?p=6813"},"modified":"2022-04-07T11:17:07","modified_gmt":"2022-04-07T09:17:07","slug":"pastis-de-xocolata-i-merenga","status":"publish","type":"recepta","link":"https:\/\/web2025.gastronomicament.cat\/ca\/recepta\/pastis-de-xocolata-i-merenga","title":{"rendered":"Past\u00eds de xocolata i merenga"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p><em>Per al past\u00eds:<\/em><\/p>\n<ul>\n<li>7 rovells d\u2019ou<\/li>\n<li>1 got de sucre (aprox. 200 grams)<\/li>\n<li>1 got de llet (aprox. 240 grams)<\/li>\n<li>150 g de margarina o mantega blaneta<\/li>\n<li>2 gots de farina (aprox. 300 grams)<\/li>\n<li>2 cullerades de xocolata\/ cacau en pols<\/li>\n<li>1 cullerada (de postres) de bicarbonat<\/li>\n<li>1 cullerada (de sopa) de vinagre<\/li>\n<\/ul>\n<p><em>Per a la merenga<\/em>:<\/p>\n<ul>\n<li><em>7 clares (o blancs d\u2019ou) a temperatura ambient<\/em><\/li>\n<li><em> Un parell de cullerades de sucre per clara d&#8217;ou<br \/>\n<\/em><\/li>\n<li><em> Unes gotes de suc de llimona<\/em><\/li>\n<li><em> Un polsim de sal<\/em><\/li>\n<\/ul>\n<p><em>Per a la decoraci\u00f3 final<\/em>:<\/p>\n<ul>\n<li>Xocolata en pols<\/li>\n<li>Llet<\/li>\n<\/ul>\n<p><strong>Elaboraci\u00f3<\/strong><br \/>\n<em>El past\u00eds<\/em>:<br \/>\n1. Escalfeu el forn a 180\u00ba funci\u00f3 ventilador.<br \/>\n2. Poseu en un bol els rovells amb el sucre fins que queden ben blanquejats i pugen una mica.<br \/>\n3. Afegiu-hi la llet i barreja-ho b\u00e9.<br \/>\n4.Seguidament afegiu-hi la mantega i continueu-ho mesclant.<br \/>\n5. Passeu la farina i el cacau per un sed\u00e0s i incorporeu-ho a la barreja.<br \/>\n6. Finalment poseu el bicarbonat i despr\u00e9s el vinagre i remeneu-ho b\u00e9.<br \/>\n7. Poseu la pasta en un motlle de 25&#215;35 cm, pr\u00e8viament untat amb oli o mantega i empolvorat amb un poc de farina tamisada. Intenteu que la barreja s\u2019escampe b\u00e9 per totes bandes i que quede el m\u00e9s uniforme possible. (Si no s\u2019escampa b\u00e9 acabar\u00e0 pujant m\u00e9s d\u2019un cant\u00f3 que d\u2019un altre i no ens quedar\u00e0 b\u00e9 el past\u00eds).<br \/>\n8. Enforneu-ho a 180\u00ba durant aproximadament uns 20 minuts o fins que vegeu que punxant amb una broqueta de fusta aquesta en surt seca.<\/p>\n<p><em>La merenga<\/em>:<br \/>\n9. Mentrestant neteja i seca b\u00e9 les barnilles. \u00c9s molt important que no tinguen restes de greix per tal que ens pugen b\u00e9 les clares.<br \/>\n10. Fiqueu en un bol net les clares i munteu-les. Quan comencen a endurir, comenceu a posar el sucre molt a poc a poc. Poseu-ne una cullerada i quan s\u2019haja integrat b\u00e9, afegeiu-hi la seg\u00fcent. La merenga ha de quedar ben dura. No escatimeu en sucre perqu\u00e8 sin\u00f3 la merenga baixar\u00e0 i el past\u00eds no quedar\u00e0 bonic. Perqu\u00e8 aguanten ben dures quasi al final poseu-hi un polsim de sal i un rajol\u00ed de suc de llimona.<br \/>\n11. Quan estiga fet el past\u00eds de xocolata, traieu-lo per\u00f2 no apagueu el forn.<br \/>\n12. En calent, poseu la meitat de la merenga per sobre. Escampeu-ho b\u00e9 fins que quede una capa ben uniforme.<br \/>\n13.\u00a0 Amb l\u2019altra meitat de la merenga forma muntonets. (Amb el motlle que heu utilitzat, fareu 4&#215;5 muntonets). Els podeu fer amb una m\u00e0niga pastissera o b\u00e9 amb una cullera de les de sopa: S\u2019agafa una cullerada de merenga i un cop a sobre del past\u00eds, mentre dibuixeu com un remol\u00ed, aixequeu la cullera cap amunt.<br \/>\n14. Quan hageu acabat, torneu a posar el past\u00eds al forn aproximadament uns 5 minuts, fins que es dore la merenga.<\/p>\n<p><em>Decoraci\u00f3 final<\/em>:<br \/>\n15. Prepareu la xocolata per a la decoraci\u00f3 final: escalfeu dos dits de llet. Poseu en un bol menut un parell de cullerades de xocolata en pols i afegiu-hi llet fins que agafe una mica de consist\u00e8ncia.<br \/>\nQueda molt curi\u00f3s si dibuixeu com una quadr\u00edcula prenent de refer\u00e8ncia els munts de merenga. Finalment tireu per sobre de la merenga la xocolata desfeta de forma irregular i en la quantitat que vulgues.<\/p>\n<p>16.- Deixeu-ho refredar.<\/p>\n<p>Temps total: 1 horeta
