{"id":3741,"date":"2012-03-14T10:35:14","date_gmt":"2012-03-14T10:35:14","guid":{"rendered":"http:\/\/anardetapes.cat\/restaurantsmallorca\/?p=1506"},"modified":"2022-04-07T11:16:44","modified_gmt":"2022-04-07T09:16:44","slug":"recepta-arros-melos-de-primavera","status":"publish","type":"recepta","link":"https:\/\/web2025.gastronomicament.cat\/ca\/recepta\/recepta-arros-melos-de-primavera","title":{"rendered":"Arr\u00f2s mel\u00f3s de primavera"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p><em>Per a quatre persones<\/em><br \/>\n&#8211; 300 g de carn de xot de la cuixa a trossets regulars<br \/>\n&#8211; 150 g de carabassa<br \/>\n&#8211; 70 g de x\u00edtxeros (p\u00e8sols) frescs<br \/>\n&#8211; \u00bd carabass\u00f3<br \/>\n&#8211; 3 carxofes<br \/>\n&#8211; \u00bd ceba mitjana<br \/>\n&#8211; 1 tom\u00e0tiga de ramellet<br \/>\n&#8211; 3 grells (cebes tendres)<br \/>\n&#8211; 300 g d&#8217;arr\u00f2s<br \/>\n&#8211; Sal<br \/>\n&#8211; Pebre bo<br \/>\n&#8211; 3 cullerades d&#8217;oli d&#8217;oliva<br \/>\n&#8211; Uns brins de safr\u00e0 torrats i esmicolats<\/p>\n<p><strong>Preparaci\u00f3<\/strong><\/p>\n<p>Pelau la ceba i picau-la ben fina. Ratllau la tom\u00e0tiga. Salpebrau la carn. Esflorau els x\u00edtxeros. Netejau el carabass\u00f3 i tallau-lo a trossets regulars. Netejau els grells i tallau-los a rodanxes primes. Eliminau les fulles m\u00e9s exteriors de les carxofes i les puntes. Tallau els cors a trossets regulars. Pelau la carabassa i tallau-la a daus petits.<\/p>\n<p>Posau una olla al foc amb 2 litres d&#8217;aigua.<\/p>\n<p>Posau una greixonera al foc amb l&#8217;oli. En ser calent, abocau-hi la carn i sofregiu-la fins que sigui ben daurada. Abaixau el foc i afegiu-hi la ceba. Tapau la greixonera i coeu la ceba fins que sigui transparent al m\u00ednim. Incorporau-hi despr\u00e9s la tom\u00e0tiga i apujau el foc. Afegiu-hi un poc m\u00e9s de sal. Quan la tom\u00e0tiga sigui brillant, abocau-hi l&#8217;aigua bullent.<\/p>\n<p>Feis bullir el brou amb la carn durant 15 minuts a poc foc. Abocau-hi ara la carabassa, els x\u00edtxeros (si els posau congelats, afegiu-los m\u00e9s tard, quan hi tireu l&#8217;arr\u00f2s) i el safr\u00e0. Tastau el brou i rectificau de sal si fos prec\u00eds. Tirau-hi l&#8217;arr\u00f2s, les carxofes i el carabass\u00f3.<\/p>\n<p>Al cap de 10 minuts, abocau-hi el grell i apagau el foc.
