{"id":96088,"date":"2025-07-14T12:57:53","date_gmt":"2025-07-14T10:57:53","guid":{"rendered":"https:\/\/gastronomicament.cat\/jornada-tecnica-de-tast-professional-de-sobrassada-vi-i-oli"},"modified":"2026-04-16T16:33:46","modified_gmt":"2026-04-16T14:33:46","slug":"jornada-tecnica-de-tast-professional-de-sobrassada-vi-i-oli","status":"publish","type":"post","link":"https:\/\/web2025.gastronomicament.cat\/ca\/jornada-tecnica-de-tast-professional-de-sobrassada-vi-i-oli","title":{"rendered":"Jornada t\u00e8cnica de tast professional de sobrassada, vi i oli"},"content":{"rendered":"\n<p>Els Consells Reguladors de la IGP Sobrassada de Mallorca i de la DO Binissalem, iniciaren al 2023 aquesta activitat, un esdeveniment anual, que t\u00e9 com a objectiu posar en valor la tasca dels panells de tast professionals d\u2019aquestes entitats.<\/p>\n\n\n\n<p>L&#8217;any 2024, convid\u00e0rem a participar-hi a la DOP Ma\u00f3-Menorca, i en aquesta tercera edici\u00f3 s\u2019hi adheriran la denominaci\u00f3 d&#8217;origen (DO) Pla i Llevant i la DO Oli de Mallorca, per fer un intercanvi d\u2019experi\u00e8ncies i ampliar la visi\u00f3 i coneixement de l\u2019an\u00e0lisi sensorial.<\/p>\n\n\n\n<p>La Jornada ha tengut lloc el dia 11 de juliol a la sala Catalina Balaguer del nou espai multifuncional de la Casa de la Vila de Santa Eug\u00e8nia, i ha tengut&nbsp; la col\u00b7laboraci\u00f3 de l&#8217;Ajuntament d&#8217;aquest municipi.<\/p>\n\n\n\n<p>La sessi\u00f3 ha consistit en un tast de vins de la DO Pla i Llevant i un tast d\u2019oli DO Mallorca dirigits, respectivament, per t\u00e8cnics de les dues entitats i a la qual han participat els membres dels panells de tast de la IGP Sobrassada de Mallorca, DO Binissalem i DO Pla i Llevant.<\/p>\n\n\n\n<p><strong>An\u00e0lisi sensorial<\/strong><\/p>\n\n\n\n<p>L\u2019an\u00e0lisi sensorial \u00e9s una t\u00e8cnica objectiva de mesura que empra el \u00f2rgans dels sentits per a con\u00e8ixer i avaluar les propietats sensorials del aliments: color, aspecte, aroma, textura, gust.<\/p>\n\n\n\n<p>Empra la percepci\u00f3 sensorial com a instrument d\u2019an\u00e0lisi i aplica el m\u00e8tode cient\u00edfic per avaluar les caracter\u00edstiques sensorials del vi DO Binissalem o la Sobrassada de Mallorca IGP.<\/p>\n\n\n\n<p>Aquests consells reguladors tenen una dilatada experi\u00e8ncia en l\u2019an\u00e0lisi sensorial i en la configuraci\u00f3 i manteniment d\u2019un panell de tast professional, especialitzat i objectiu per valorar el compliment dels requisits sensorials que estableixen els plecs de condicions respectius.<\/p>\n\n\n\n<p>La formaci\u00f3 d\u2019un panell de tast professional sota aquest marc normatiu i sota la direcci\u00f3 d\u2019una directora de panell, requereix d\u2019un proc\u00e9s t\u00e8cnic rigor\u00f3s de selecci\u00f3 dels candidats, preparaci\u00f3 de refer\u00e8ncies, entrenament dels aspirants, qualificaci\u00f3 i formaci\u00f3 cont\u00ednua dels membres que el conformen, entre 15-20 persones.<\/p>\n\n\n\n<p>Aquestes persones, amb habilitats sensorials, i no sempre professionals del sector, es formen espec\u00edficament per avaluar, a cegues i de forma objectiva, si els productes compleixen amb els requisits establerts al plec de condicions. Aquest \u00e9s un punt m\u00e9s de la certificaci\u00f3 de producte.<\/p>\n\n\n\n<p>Cada Consell Regulador disposa del seu propi panell en el qual els seus tastadors, una vegada superat el proc\u00e9s de formaci\u00f3, reben una credencial que els qualifica com a tastadors professionals, i passen a avaluar de forma peri\u00f2dica els productes a les sessions de tast de control.<\/p>\n\n\n\n<p>El compliment de tots els requisits establerts en els plecs de condicions, permet fer \u00fas de la IGP Sobrassada de Mallorca, DO Binissalem, DO Pla i Llevant, DO Oli de Mallorca o DOP Ma\u00f3-Menorca
