Al darrer concurs Mundus Vini de Biofach (Alemanya) va ser considerat com el millor vi ecol\u00f2gic de l&#8217;Estat espanyols d&#8217;entre tots els que es presentaren a la competici\u00f3. Aquest vi s&#8217;emmarca en la indicaci\u00f3 geogr\u00e0fica Vi de la Terra Mallorca.<\/p>\n<p>Aquest vi, Ventum, de l&#8217;anyada 2016, t\u00e9 un color vermell intens de cirera picota, amb notes de regalim. Gr\u00e0cies als 12 mesos que reposa en bota de roure, despr\u00e8n complexitat i densitat amb un postgust llarg. Els encarregats d&#8217;aquest celler familiar s\u00f3n Antoine y H\u00e9lo\u00efse Lienhardt, que han continuat l&#8217;ofici del seu padr\u00ed Maurice Gyyott\u00e9.<\/p>\n<p>Bourgogne Rouge 2017 t\u00e9 una crian\u00e7a d&#8217;un any en botes de roure, el 20% de les qual s\u00f3n noves. En vista, \u00e9s net, amb un vermell cirera picota, hi destaquen aromes de fruita madura i reminisc\u00e8ncies de vainilla. Es verema a m\u00e0 al vespre, a final del mes d&#8217;agost per aprofitar la temperatura m\u00e9s fresca i evitar-ne l&#8217;oxidaci\u00f3. Despr\u00e9s, es trasllada en un cami\u00f3 refrigerat al microceller Celler Jaume on se selecciona el ra\u00efm i se&#8217;n fa el vi.<\/p>\n<p>\u00c9s un blanc de negres, monovarietal de Pinot Noir, que ha envellit durant 90 mesos a temperatura constant de 14 graus. \u00c9s un vi escum\u00f3s elegant, de groc palla amb reflexos daurats i delicada bimbolla. T\u00e9 notes afruitades al nas com de cirera i gerds, tamb\u00e9 minerals i especiades (pebre rosa).
