{"id":103405,"date":"2026-01-07T08:36:14","date_gmt":"2026-01-07T07:36:14","guid":{"rendered":"https:\/\/web2025.gastronomicament.cat\/espero-de-gall-escursac-i-giro-negre-noves-varietats-de-raim-a-la-igp-mallorca"},"modified":"2026-04-12T20:29:04","modified_gmt":"2026-04-12T18:29:04","slug":"espero-de-gall-escursac-i-giro-negre-noves-varietats-de-raim-a-la-igp-mallorca","status":"publish","type":"post","link":"https:\/\/web2025.gastronomicament.cat\/ca\/espero-de-gall-escursac-i-giro-negre-noves-varietats-de-raim-a-la-igp-mallorca","title":{"rendered":"Esper\u00f3 de gall, escursac i gir\u00f3 negre: noves varietats de ra\u00efm a la IGP Mallorca"},"content":{"rendered":"<p>La Conselleria d\u2019Agricultura, Pesca i Medi Natural, a trav\u00e9s de la Direcci\u00f3 General de Qualitat Agroaliment\u00e0ria i Producte Local, ha aprovat la modificaci\u00f3 del plec de condicions de la Indicaci\u00f3 Geogr\u00e0fica Protegida (IGP) Mallorca amb l\u2019objectiu d\u2019adaptar la normativa vitivin\u00edcola a les noves condicions clim\u00e0tiques, refor\u00e7ar el vincle territorial dels vins i avan\u00e7ar en la simplificaci\u00f3 administrativa del sector. Aquestes modificacions, publicades al Butllet\u00ed Oficial de les Illes Balears (BOIB),<strong>\u00a0introdueixen canvis rellevants tant en els requisits t\u00e8cnics dels vins emparats com en la regulaci\u00f3 de varietats autoritzades<\/strong>, fruit d\u2019una feina conjunta amb el sector i avalat per estudis cient\u00edfics.<\/p>\n<p>En el cas de la zona de a denominaci\u00f3 d&#8217;origen protegida (DOP)\u00a0<strong>Pla i Llevant &#8211; Mallorca<\/strong>, la modificaci\u00f3<strong>\u00a0rebaixa el valor m\u00ednim d\u2019acidesa total dels vins tranquils i escumosos fins als 3,5 grams per litre d\u2019\u00e0cid tart\u00e0ric<\/strong>. Aquesta adaptaci\u00f3 respon a\u00a0<strong>l\u2019augment sostingut de les temperatures durant el per\u00edode de maduraci\u00f3 del ra\u00efm<\/strong>, que en els darrers 30 anys\u00a0<strong>ha provocat una disminuci\u00f3 natural de l\u2019acidesa del\u00a0most<\/strong>, segons un estudi de la Universitat de les Illes Balears (UIB).<\/p>\n<p>En aquest sentit, el director general de Qualitat Agroaliment\u00e0ria i Producte Local,\u00a0<strong>Joan Llabr\u00e9s<\/strong>, ha explicat que la nova regulaci\u00f3 permet reduir la necessitat de correccions artificials d\u2019acidesa, que poden generar problemes d\u2019estabilitat i alteracions organol\u00e8ptiques, sense que aix\u00f2 tengui un impacte negatiu en la qualitat del vi. A m\u00e9s,\u00a0<strong>la mesura s\u2019alinea amb altres figures de qualitat de territoris clim\u00e0ticament similars, com algunes denominacions d\u2019origen de Catalunya i del Pa\u00eds Valenci\u00e0<\/strong>.<\/p>\n<p>Paral\u00b7lelament, l\u2019Ordre incorpora una mesura de simplificaci\u00f3 administrativa que elimina l\u2019obligaci\u00f3 de renovar anualment les autoritzacions per indicar l\u2019anyada i la varietat en els vins sense DOP ni IGP. \u00abL\u2019experi\u00e8ncia acumulada de m\u00e9s de quinze anys de gesti\u00f3 ha demostrat que aquest requisit no \u00e9s necessari i que l\u2019Administraci\u00f3 disposa de mecanismes suficients per actuar davant possibles usos indeguts de l\u2019etiquetatge\u00bb, ha remarcat Llabr\u00e9s.<\/p>\n<p>Pel que fa a la<strong>\u00a0IGP Mallorca<\/strong>, el nou plec de condicions autoritza la incorporaci\u00f3 de les varietats locals\u00a0<strong>escursac, gir\u00f3 negre i esper\u00f3 de gall\u00a0<\/strong>com a varietats aptes per a la vinificaci\u00f3.\u00a0<strong>Es tracta de varietats amb una pres\u00e8ncia documentada a l\u2019illa des del segle XIX i amb un fort arrelament territorial<\/strong>, que en les darreres d\u00e8cades han estat objecte d\u2019un proc\u00e9s de recuperaci\u00f3 per part del sector.<\/p>\n<p>\u00abEls vins elaborats amb aquestes varietats han demostrat una\u00a0<strong>elevada qualitat, amb reconeixement per part de la premsa especialitzada i altes puntuacions en guies de prestigi<\/strong>. A m\u00e9s, aporten perfils arom\u00e0tics diferenciats, especialment notes de fruits vermells, i permeten obtenir vins amb una\u00a0<strong>graduaci\u00f3 alcoh\u00f2lica m\u00e9s moderada, en l\u00ednia amb les tend\u00e8ncies actuals del mercat<\/strong>. En el cas de l\u2019escursac, tamb\u00e9 s\u2019ha acreditat una elevada efici\u00e8ncia h\u00eddrica, un factor clau en el context clim\u00e0tic actual\u00bb, ha subratllat el director general.<\/p>\n<p>Amb tot, la modificaci\u00f3 del plec tamb\u00e9 actualitza la descripci\u00f3 del color dels vins negres, per reflectir millor la realitat actual del sector. En els darrers anys, les varietats locals han guanyat protagonisme fins al punt que, el 2024,\u00a0<strong>m\u00e9s del 50 % de les partides qualificades incorporaven majorit\u00e0riament ra\u00efm aut\u00f2cton<\/strong>, fet que es tradueix en vins amb una capa de color m\u00e9s variable, sense que aix\u00f2 afecti la seva qualitat ni el seu prestigi.<\/p>\n<p>\u00abAmb aquestes modificacions,\u00a0<strong>reafirmam el nostre comprom\u00eds amb el sector vitivin\u00edcola m\u00e9s adaptat al canvi clim\u00e0tic, arrelat al territori, competitiu i amb menys c\u00e0rrega administrativa<\/strong>, per refor\u00e7ar alhora la identitat i la qualitat dels vins de les Illes Balears\u00bb, ha concl\u00f2s
