La tom\u00e0tiga (tamb\u00e9 dita tom\u00e0quet o tom\u00e0tic) \u00e9s origin\u00e0ria d&#8217;Am\u00e8rica i considerada durant segles una planta ornamental a Europa, s&#8217;ha convertit en un dels ingredients clau de la dieta mediterr\u00e0nia per la versatilitat, la frescor i els beneficis nutricionals: \u00e9s rica en antioxidants, com el licop\u00e8, a m\u00e9s d&#8217;aportar vitamines A i C, i afavorir la hidrataci\u00f3.<\/p>\n\n\n\n<p>En aquest esdeveniment privat, celebrat al restaurant Bot\u00e0nic de l&#8217;hotel de 5 estrelles Gran Luxe Can Bordoy Grand House &amp; Garden (Palma), s&#8217;han presentat i avaluat 45 tom\u00e0tigues de 8 categories, procedents de diferents or\u00edgens. El jurat ha analitzat cada mostra atenent criteris com l&#8217;aspecte, l&#8217;aroma, la textura, l&#8217;estructura, l&#8217;equilibri i, per descomptat, el sabor.<\/p>\n\n\n\n<p><strong>Una d\u00e8cada valorant la millor tom\u00e0tiga del m\u00f3n<br><\/strong>Com ha passat en altres edicions, el tast ha tengut un jurat especialitzat, format per Tiffany Blackman d&#8217;Aubocassa, Laura Calvo de Salines d&#8217;Es Trenc, el xef Andr\u00e9s Ben\u00edtez, l&#8217;enginyer agr\u00f2nom Jaume Jaume i el pag\u00e8s Bernat Ferrer.<\/p>\n\n\n\n<p>En aquesta edici\u00f3, el tast ha incl\u00f2s varietats tan singulars com la tom\u00e0tiga groga o la tom\u00e0tiga verda. Aquesta diversitat d&#8217;or\u00edgens i tipologies ressalta el valor gastron\u00f2mic de la tom\u00e0tiga com a producte essencial de la dieta mediterr\u00e0nia. El certamen no sols reconeix qualitat hort\u00edcola, sin\u00f3 que serveix com a espai de reflexi\u00f3 sobre el cultiu, el clima i l&#8217;evoluci\u00f3 del paladar al voltant d&#8217;un ingredient mil\u00b7lenari.<\/p>\n\n\n\n<p>Despr\u00e9s de m\u00e9s de 3 hores de tast i diversos dies de deliberaci\u00f3, el jurat de la 10a Edici\u00f3 del Certamen Internacional de la Tom\u00e0tiga de Mallorca ha reconegut com a tom\u00e0quets m\u00e9s ben valorats a les seves respectives categories els seg\u00fcents:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ra\u00ef At\u00f2mic de Son Soler, en categoria especial o\u00a0<em>novelties<\/em>.<\/li>\n\n\n\n<li>Tia Apol\u00b7l\u00f2nia de Son Vell en amanida, amb un acc\u00e8ssit destacat en aquesta categoria per a la tom\u00e0tiga de\u00a0 Valldemosa de la finca Aubocassa.<\/li>\n\n\n\n<li>Cor de Bou de Terracor i Grupo De Castro.<\/li>\n\n\n\n<li>Tom\u00e0tiga Rosa de Grup de Castro.<\/li>\n\n\n\n<li>Pera (tamb\u00e9 dita tom\u00e0tiga de frare) de Son Vell en categoria pera.<\/li>\n\n\n\n<li>A la categoria cherry\u00a0 (tomatig\u00f3) el de Terracor.<\/li>\n<\/ul>\n\n\n\n<p>Aquestes han estat les consideracions finals del jurat:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong><em>Novelties<\/em><\/strong>: en aquesta categoria especial s&#8217;han incl\u00f2s 4 tom\u00e0tigues de dif\u00edcil encaix a les altres categories.<\/li>\n\n\n\n<li><strong>Qualitat<\/strong>: totes les tom\u00e0tigues s\u00f3n madures, gustoses, poc \u00e0cides, amb textura no granulosa, amb un gran gust i aromes equilibrades, que \u00e9s el que esperaven trobar al certamen.<\/li>\n\n\n\n<li><strong>Canvi a l&#8217;excel\u00b7l\u00e8ncia<\/strong>: els darrers anys s&#8217;ha perseguit posar de manifest el descens de la qualitat de la tom\u00e0tiga, per\u00f2 el jurat d&#8217;aquest des\u00e8 certamen ha presenciat amb molta alegria el contrari; \u00e9s a dir, que la gran majoria s\u00f3n de gran qualitat.<\/li>\n\n\n\n<li><strong>Objectius<\/strong>: despr\u00e9s de 10 anys, el certamen ha aconseguit un dels seus objectius principals, que \u00e9s traslladar a l&#8217;opini\u00f3 p\u00fablica, i als productors, que la tom\u00e0tiga i el seu cultiu \u00e9s important, i vist la gran qualitat de les varietats presentades, s&#8217;ha aconseguit.<\/li>\n\n\n\n<li><strong>Dieta i gastronomia mediterr\u00e0nies<\/strong>: la tom\u00e0tiga amb sal i oli \u00e9s un aliment que es complementa, especialment per aportar vitamines, minerals, nutrients essencials i fibra.<\/li>\n\n\n\n<li><strong>Sector agr\u00edcola<\/strong>: el jurat posa de manifest que l&#8217;inter\u00e8s i l&#8217;esfor\u00e7 creixent per part dels productors a tenir tom\u00e0tigues excel\u00b7lents est\u00e0 donant uns resultats excepcionals.<\/li>\n\n\n\n<li><strong>Varietats en auge<\/strong>: Comenten que varietats com cor de bou, rosa i ramallet, que eren sempre d&#8217;alta qualitat, es poden veure eclipsades per tom\u00e0tigues d&#8217;amanida i de Valldemossa.<\/li>\n<\/ol>\n\n\n\n<p><strong>En aquest restaurant pots degustar algunes de les millors tom\u00e0tigues de Mallorca<br><\/strong>El restaurant Bot\u00e0nic de Palma ofereix la possibilitat de degustar excel\u00b7lents tom\u00e0tigues a Mallorca, incloses algunes de les varietats m\u00e9s ben valorades en aquesta edici\u00f3 del certamen. Es tracta del primer restaurant #<em>plantforward&nbsp;<\/em>de Mallorca, ubicat a l&#8217;hotel Can Bordoy Grand House &amp; Garden, al centre hist\u00f2ric de la capital balear.<\/p>\n\n\n\n<p>El seu xef,&nbsp;<strong>Andreu Ben\u00edtez<\/strong>, gran amant del producte vegetal i especialment de la tom\u00e0tiga, ha sabut integrar-lo a la seva cuina amb propostes creatives, elegants i plenes de sabor com el carpaccio de tom\u00e0tiga amb ametlla mallorquina i t\u00e0peres, la coca de tom\u00e0tiga confitada o el seu delicat t\u00e0rtar
